Product's "Copy Code" - How Does This Work
How does the option to Copy an Existing Product by using the existing product's "copy code" work?

It says this in the instructions, located both on that page and in the grower box on the Your Account page:

Thanks for this info.
When wanting a product to appear under more than one category, is it better to use the copy code or duplicate product function? My primary concern is over-ordering on the quantity available and I don't know if either of those functions allows a countdown on a single inventory number.

Deb,
Products can only be in one category. Whether you use the copy code or the duplicate product link (that one will eventually go away), the purpose is to create a different product, such as a different flavor or variety of something you already added. That way you can simply change the name or whatever, without having to retype everything the two have in common.
If you do put two identical products in two different categories, they will be two products. Their inventory will not be in sync. Even worse, I think it will also train your customers not to trust your category tree in the first place. If you do have products that seem like they could be in two places at once, I'd take that as a sign that you may need to tweak your categories.
